Subj : St. Basil 02 To : All From : Dave Drum Date : Sun Mar 21 2021 19:32:46 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Basil Mashed Potatoes Categories: Potatoes, Vegetables, Herbs Yield: 4 Servings 2 lb Red Bliss potatoes, peeled 4 cl Garlic; peeled, minced 2 tb + 1/4 c Olive oil 1/2 c Fresh basil leaves; in - chiffonade 1 ts Salt; to taste Place potatoes in a pot with enough salted cold water to cover. Bring to boil and cook until tender, about 18 to 20 minutes. While potatoes are cooking, saute minced garlic in 2 tablespoons of the olive oil until tender, but not browned. Set aside. Drain potatoes; return them to saucepan and toss over high heat to dry off any remaining water, about 30 seconds. Mash potatoes with the thin shredded strips of basil, reserved garlic and oil, salt and enough additional olive oil to moisten to desired consistency. Makes 4 servings.
