Subj : St. Nicholas 08 To : All From : Dave Drum Date : Sat Mar 20 2021 12:16:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Chicken St. Nicholas II - Recipe Of The Czars Categories: Poultry, Rice, Pastry, Citrus, Booze Yield: 4 Servings 8 13/16 oz Env Uncle Ben's Long Frain & - Wild Rice 4 Chicken breast halves; - skinned, boned Salt & pepper 1 lg Egg; separated 8 Sheets phyllo dough 2 tb Butter; melted 2 ts Orange zest 1/4 c Fresh orange juice 1/4 c Orange Curacao 1/2 c Orange marmalade Cook rice according to pkg. directions. Add in orange zest and cool. Pound chicken breasts to flatten. Season with salt and pepper. Beat egg whites till soft peaks form and fold into rice mix. Spread approximately 1/4 c. rice on each breast. Roll-up jelly-roll fashion. According to size of breasts use either one or possibly two sheets of Phyllo dough that has been brushed with melted butter. Place chicken piece on pastry sheet and fold and pat to seal. Mix in each side of the pastry and roll up to create a neat packet. Brush with melted butter and place on a cookie sheet. Repeat this procedure with remaining breasts, pastry and butter. You may freeze chicken at this point. Thaw in refrigerator for 30 min only and bake in 375ºF/190ºC oven for 40 - 45 minutes. Or possibly continuing on; if not using frozen breasts: bake immediately in a 375ºF/190ºC oven for 35 min. If pastry browns too quickly, cover loosely with foil. Serve lightly coated with sauce over top and pooled on the individual serving plate. FOR THE SAUCE: Combine marmalade, orange juice and orange liqueur in a small sauce pan and heat till marmalade thickens and forms a glaze. Pour lightly over cooked chicken breasts and pool some on the individual serving plates. Garnish with fresh orange slices.
