Subj : St. Nicholas 01 (of Flue) To : All From : Dave Drum Date : Sat Mar 20 2021 12:11:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: St. Nicholas Cookies Categories: Cookies, Snacks, Desserts Yield: 24 Servings 150 g Arrowroot flour or - cornflour 150 g Plain flour 2 ts Baking powder 1/4 ts Fine salt 60 g Unsalted butter; softened 220 g Caster sugar 3 lg Egg yolks 60 ml Oil 60 ml Coconut cream 1 Lemon; finely grated zest Set the oven @ 180°C/360°F. Line two baking trays with baking paper. Sift both of the flours, the baking powder and salt into a large bowl. Using an electric mixer, beat the butter and sugar in a separate bowl until light and fluffy. Add the egg yolks and beat until combined. Combine the oil, coconut cream and lemon zest in another bowl. Alternately add the coconut cream mixture and flour mixture to the butter mixture, beating until just combined. Turn the mixture out onto a lightly floured work surface and roll to 7 mm thick (if the mixture is too soft, refrigerate to firm). Using a 7 cm round fluted cookie cutter, cut out the biscuits and place on the prepared trays. Bake in the oven for 10-12 minutes, swapping the trays halfway, until the biscuits are firm and just starting to turn golden (don’t overcook as they might dry out). Remove from the oven and allow to cool for 10 minutes before serving warm or cooling completely on wire racks.
