Subj : BH&G 2159 To : ALL From : DAVE DRUM Date : Sat Mar 20 2021 17:13:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Greek Shrimp Salad Categories: Seafood, Salads, Cheese, Vegetables, Herbs Yield: 4 Servings 8 oz Pkg peeled, cooked shrimp 4 c Torn romaine 2 c Torn iceberg or leaf - lettuce 2 sm Tomatoes; chopped 3/4 c Crumbled feta cheese 2 Green onions; sliced 1/4 c Sliced pitted ripe olives 1/3 c Olive oil 1/3 c White wine vinegar 2 ts Snipped fresh oregano +=OR=+ 1/2 ts Dried oregano; crushed 1/8 ts (ea) garlic powder & pepper 2 oz Can anchovy filets; drained - (opt) Thaw shrimp. Set aside. In a large bowl toss together romaine and iceberg or leaf lettuce. Arrange greens on four individual salad plates. Top with shrimp, tomatoes, feta cheese, green onions, and olives. For dressing, in a screw-top jar, combine olive oil or salad oil, vinegar, oregano, garlic powder, and pepper. Cover and shake well to mix. Pour dressing over salads.
