You don't need to be on strike to taste this hoagie of fried shrimp on crusty French bread, topped with mayo, lettuce, tomatoes, pickles and hot sauce. Try one at Po-Boy Express. MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Foster's Market Shrimp Po'boys w/Herb Mayo Categories: Seafood, Sauces, Breads, Greens, Citrus Yield: 3 Sandwiches 1 lb Steamed lg shrimp; peeled - and deveined 1/2 c Quick Herb Mayo Juice of 1 lemon 3 tb Chopped fresh dill Sea salt & fresh ground - black pepper 2 (to 4) (6" to 8") baguettes 4 md Dill pickles; thin sliced in - rounds 3 c Loose pack mixed baby greens - or arugula MMMMM----------------------QUICK HERB MAYO--------------------------- 1 c Mayonnaise 2 tb Fresh flat-leaf parsley 2 tb Fresh dill 1 tb Fresh lemon juice 4 Fresh basil leaves Sea salt & fresh ground - pepper Put mayonnaise, parsley, dill, lemon juice, basil, and salt and pepper to taste in a blender and pulse just until mayonnaise is smooth and green. Serve or refrigerate in an airtight container until ready to use or up to 1 week. Place shrimp in medium bowl. Add 1/4 cup Quick Herb Mayo, lemon juice, and dill. Season to taste with salt and pepper, and toss to mix thoroughly. Slice baguette in half through the middle, leaving one side intact so the bread is hinged. Open the baguette and assemble sandwich by spreading 1 tablespoon remaining mayo on the sides of the baguette. Lay pickles on the bottom of the baguette and lay shrimp on top of the pickles. Top the sandwich with baby greens and close.
