Subj : St. Cuthbert 03 To : All From : Dave Drum Date : Fri Mar 19 2021 20:43:06 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: St. Cuthbert's Tomato-Ginger Jam Categories: Vegetables, Herbs, Preserving, Condiments Yield: 20 Servings 1/2 c Sugar 2 ts Kosher salt 5 1/2 lb Red heirloom tomatoes; ripe, - chopped, seeded 1/4 c Cider vinegar 3 tb Jarred pureed ginger 1 ts Minced garlic 1/2 ts Fresh ground pepper Combine first 3 ingredients in a large saucepan; let stand 10 minutes. Add remaining ingredients to pan; toss to combine. Bring to a boil over medium-high heat. Cook 30 minutes, scraping bottom of pan and stirring occasionally. Reduce heat to medium-low; cook until very thick and reduced to 3 cups (about 25 minutes), scraping bottom of pan and stirring frequently. Remove pan from heat, and cool to room temperature.
