Subj : BH&G 2141 To : ALL From : DAVE DRUM Date : Fri Mar 19 2021 16:29:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: French Chopped Salad Categories: Potatoes, Beans, Herbs, Squash, Greens Yield: 6 Servings 5 Yellow-flesh tiny new - potatoes or fingerling - potatoes; sliced 1/4" 1 c Green beans; in 1" pieces 2 tb Champagne or white wine - vinegar 2 tb Olive oil 1 tb Snipped fresh tarragon 1 ts Honey 1/4 ts (ea) salt & cracked black - pepper 4 c Chopped romaine lettuce 3 lg Hard-cooked eggs; in wedges 1/2 c Chopped English cucumber 1/4 c Pitted nicoise or kalamata - olives 3 Radishes; thin sliced 2 tb Thin sliced shallot In a covered medium saucepan cook potatoes and green beans in enough boiling water to cover for 5 to 8 minutes or until tender; drain. Immediately transfer to a bowl of ice water to stop cooking; drain again. For vinaigrette, in a screw-top jar combine vinegar, oil, tarragon, honey, salt, and pepper. Cover and shake well. In a large bowl combine potatoes, green beans, lettuce, eggs, cucumber, olives, radishes, and shallot. Add vinaigrette; toss gently to coat.
