Subj : BH&G 2121 To : ALL From : DAVE DRUM Date : Wed Mar 17 2021 16:20:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Pistachio Baked Salmon Categories: Seafood, Nuts, Citrus, Herbs Yield: 6 Servings 1 c Salted dry roasted pistachio - nuts; chopped 1/2 c Packed brown sugar 3 tb Lemon juice 1 ts Dried dillweed 1 ts Coarse ground black pepper 6 (6 oz ea) skinless salmon - filets 1/4 c Purchased basil pesto (opt) Set oven @ 425ºF/218ºC. In a small bowl combine pistachio nuts, brown sugar, lemon juice, dillweed, and pepper; set aside. Place salmon filets in a greased, foil-lined 15x10x1-inch baking pan. Measure thickness of fish. Spoon pistachio mixture evenly on each filet. Gently press in place to form a crust. Bake for 6 to 8 minutes for each 1/2" thickness of fish or until fish flakes easily when tested with a fork.
