Subj : BH&G 2005 To : ALL From : DAVE DRUM Date : Fri Mar 05 2021 13:11:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Soba Noodles w/Spring Vegetables Categories: Pasta, Vegetables, Poultry Yield: 2 Servings 14 1/2 oz Can vegetable or chicken - broth 1 tb Fine chopped fresh ginger 1 tb Soy sauce 1/2 c Thin sliced carrots (1 - medium) 4 oz Packaged dried soba noodles; - broken +=OR=+ 4 oz Whole wheat spaghetti; - broken 1 c Cubed cooked chicken or - turkey 1 c Shredded bok choy 1/2 c Halved pea pods 1/3 c Sliced radishes or chopped - daikon 1/2 ts Toasted sesame oil Green onion strips In a large saucepan combine broth, ginger, and soy sauce. Bring to boiling; reduce heat. Simmer, covered, for 5 minutes. Add carrots; simmer for 3 minutes. Stir in noodles. (If using whole wheat spaghetti, stir in pasta and cook for 6 minutes before adding carrots.) Bring to boiling; reduce heat. Simmer, uncovered, about 4 minutes or until noodles and carrots are tender. Stir in chicken, bok choy, pea pods, radishes, and sesame oil; heat through. Sprinkle each serving with green onion strips.
