Subj : St. Kieran 05 To : All From : Dave Drum Date : Thu Mar 04 2021 11:54:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Tomato Lime Pulled Chicken Tacos By Chef Keiran Kearns Categories: Poultry, Breads, Herbs, Vegetables, Chilies Yield: 8 servings 1 1/2 lb Chicken breast MMMMM--------------------------MARINADE------------------------------- 1 c San Marzano tomatoes; pureed - in food processor until - smooth 2 ts Ground cumin 1 ts Ground coriander 1 cl Minced garlic 1/4 ts Cayenne powder 1/2 ts Chilli spice mix 1 tb Lime juice Set your oven @ 400ºF/205ºC. Combine ingredients for the marinade until spices are evenly distributed. Marinate your raw chicken breasts in 1/3 cup marinade (sparing 2/3 for later), and lay flat over a parchment lined baking sheet. Using a spatula, ensure no marinade is left in the bowl and all ends up coating your chicken. Bake in your until a thermometer inserted into the thickest part of the breast reads 165ºF/74ºC. Remove from oven and pull your chicken into long strands, pulling with the grain of the meat using two forks. Once all the chicken is pulled, add the remaining 2/3 cup of your marinade and mix until combined. Brush corn tortillas lightly with olive oil, and place in a skillet two at a time and toast for 20-30 seconds per side until the tortillas are warm and just before they crisp. Combine pulled chicken mixture with remaining 2/3 marinade, and reheat on stove-top.
