They borrowed the name when they started making this stew full of varied seafood around Fisherman's Wharf in the late 1800s. MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Cioppino * Categories: Soups, Seafood, Vegetables, Herbs, Wine Yield: 8 Servings 1 lg Onion; chopped 1 md Bell pepper; cored, seeded, - chopped 1/2 c Sliced celery 1 lg Carrot; scraped, shredded 3 cl Garlic; minced 3 tb Olive oil 32 oz (2 cans) tomatoes 8 oz Can tomato sauce 1 ts Dried leaf basil; crumbled 1 California bay leaf 1 ts Salt 1/4 ts Pepper 1 lb Swordfish or halibut steak 1 Dozen mussels +=OR=+ 10 oz Can clams in shells 1 1/2 c Dry white wine 8 oz Pkg shelled, deveined shrimp 1/2 lb Scallops * UDD Note: Cioppino is a fish stew originating in San Francisco, California. It is considered an Italian- American dish, and is related to various regional fish soups and stews of Italian cuisine. This is the East Coast version. Saute onion, bell pepper, celery, carrot andgarlic in olive oil until soft in a kettle or Dutch oven. Stir in tomatoes, tomato sauce, basil, bay leaf, salt & pepper. Heat to boiling, reduce heat, cover and simmer 2 hours. Fish out and discard the bay leaf. While the sauce simmers, skin the fish and cut into serving-sized pieces. Thoroughly clean mussels or clams. Stir wine into sauce in kettle. Add fish, shrimp and scallops. Simmer, covered, 10 minutes more. Place the mussels or clams in a layer on top of fish in kettle; cover; steam 5 to 10 minutes or until the shells are fully opened and fish flakes easily. Ladle into soup bowls or plates. Sprinkle with parsley. Serve with crusty Italian or French bread.
