Subj : BH&G 1964 To : ALL From : DAVE DRUM Date : Mon Mar 01 2021 14:53:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Garlic Chicken w/Artichokes Categories: Poultry, Vegetables, Herbs, Citrus, Rice Yield: 6 Servings 2 md Red bell peppers; into 1" - strips 2 md Onions; in wedges 12 cl Garlic; peeled 1 tb Quick-cooking tapioca 2 ts Dried rosemary; crushed 1 ts Fine shredded lemon peel 1/2 ts Ground black pepper 1/2 c Chicken broth 3 lb Skinned, boned chicken - thighs 8 oz Pkg artichoke hearts 1 tb Lemon juice 4 c Hot cooked brown rice In a 3 1/2 or 4 quart slow cooker combine sweet peppers, onions, garlic, tapioca, rosemary, lemon peel, and black pepper. Pour broth over mixture in cooker. Add chicken. Cover and cook on low-heat setting for 5 hours or on high-heat setting for 2 1/2 hours. If using low-heat setting, turn cooker to high-heat setting. Stir in frozen artichoke hearts and lemon juice. Cover and cook 30 to 60 minutes more. Serve with rice.
