      Title: Hilary's Squash Casserole

      Yield: 5 Servings
 
      5 md Yellow squash sliced 1/4"
           - rounds
      1 lg Onion halved and sliced
           - thin
      2 tb Butter, divided
    1/2 c  Chicken stock
  1 1/2    Tubes ritz crackers
    1/2 c  Cream
           Salt & pepper
 
  Set oven @ 350ºF/175ºC
  
  Butter oven-proof bowl/casserole. Saute onions and squash
  until slightly soft, adding salt and pepper to taste. Add
  chicken stock and cover for about 5 minutes.
  
  Crumb the ritz crackers in the tubes. Layer half tube of
  ritz crackers on the bottom of the bowl.
  
  Pour off chicken stock and add 1/2 squash
  mixture to bowl.
  
  Layer second half tube of ritz crackers over squash. Add
  remaining squash mixture.
  
  Saute third half tube of ritz crackers in butter briefly.
  Top bowl with sauteed crackers. Pour cream over the top.
  
  Cook in oven for 30 minutes.
  
  YIELD: 4-6 servings
