Subj : St. Hilary 03 To : All From : Dave Drum Date : Sat Feb 27 2021 12:37:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Hilary's Holiday Hash Categories: Potatoes, Vegetables, Herbs Yield: 4 Servings 1 lb Sweet potatoes; unpeeled, in - 1/2" chunks (3 cups) 1 lb Red beets; peeled, into 1/2" - chunks (3 cups) Avocado oil spray 1 1/2 ts Smoked paprika 1 ts Coriander 1/2 ts Cumin 1/2 ts Garlic powder Himalayan sea salt 7 1/2 oz Pkg Hilary's Eat Well Apple - Maple Breakfast Sausage MMMMM--------------------OPTIONAL FOR SERVING------------------------- Fresh herbs Hummus Hot sauce Avocado/guacamole Ketchup Maple syrup Set oven @ 400ºF/205ºC and line a baking pan with parchment paper. Add smoked paprika, coriander, cumin, garlic powder, and Himalayan sea salt to a large bowl and toss to combine. Place cubed sweet potatoes and beets in the bowl and toss to combine. Add optional drizzle of avocado here, if desired. Add sweet potato beet mixture to the baking pan and spread into an even layer, making sure none overlap. (You may need to use two pans to achieve this) Roast the sweet potatoes and beets for 20 minutes, then remove from the oven, stir, move mixture aside, and add package of Apple Maple Breakfast Sausage to the pan. Return pan to the oven and cook for an additional 10-15 minutes, flipping the patties once halfway. Serve immediately with fresh herbs and dip of choice. Store leftover hash in the fridge for 5-7 days. * see note for reheating instructions NOTES: * If you're planning to have leftovers, only bake as many Hilary's patties as you plan to consume in one sitting. Patties are best fresh! Trying reheat the leftovers in the oven (10 mins at 400ºF/205ºC) while baking additional Hilary's patties the next day.
