MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Dexter Weaver's Sweet Potato Souffle By Leander Mcclain
 Categories: Potatoes, Dairy, Herbs, Citrus
      Yield: 7 Servings
 
      3 lb Sweet potatoes; peeled, in
           - small chunks
    3/4 c  Sugar
      3 lg Eggs; lightly beaten
    1/2 c  Unsalted butter; melted
      3 tb Whole milk
      2 ts Fresh grated nutmeg
      2 ts Vanilla extract
    3/4 ts Lemon extract
 
  Set oven @ 350ºF/175ºC.
  
  Cook sweet potatoes in boiling water to cover 15 to 20
  minutes or until tender.
  
  Drain and mash
  
  Combine with remaining ingredients and stir until smooth
  (I use mixer).
  
  Spoon mixture into lightly greased 11" x 7" x 3" baking
  dish.
  
  Bake in over for 1 hour or until firm.
