Subj : St. Oswald 04 To : All From : Dave Drum Date : Mon Feb 22 2021 06:37:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Martin Oswald's Lemon Risotto Categories: Vegetables, Herbs, Greens, Citrus, Nuts Yield: 4 Servings 1/2 lg Onion; diced 2 cl Garlic; fine chopped 1 c Red roasted peppers 1/2 c Vegetable stock 6 c Cauliflower pearls 2 Lemons; juice & zest 2 tb Chives; sliced 1 tb Nutritional yeast 2 c Spinach; fine sliced 4 tb Almond butter 2 tb Almonds Sautee the onion and garlic in a sauté pan without water, stirring often until golden brown about 7 minutes. Add the vegetable stock and cauliflower sauté for 3 minutes. Add all other ingredients except the almonds and 1 TB chives, cook for 3 more minutes or until cauliflower is al dente.
