Subj : BH&G 1900 To : ALL From : DAVE DRUM Date : Mon Feb 22 2021 05:16:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Sweet Potato Fritters w/Yogurt Chive Dipping Sauce Categories: Breads, Dairy, Herbs Yield: 7 Servings 1 lb Sweet potatoes; peeled, in - 1/2" pieces (2 1/2 cups) 1 Lh egg 1/4 c Packed brown sugar 2 tb Butter 1 c All-purpose flour 1/3 c Fine dry bread crumbs 2 ts Baking powder 1/4 ts Salt Oil for deep-fat frying MMMMM----------------YOGHURT-CHIVE DIPPING SAUCE--------------------- 6 oz Carton plain yoghurt 1 tb Snipped fresh chives 1 cl Garlic; minced Salt & ground black pepper In a small bowl combine yogurt, chives, and garlic. Season to taste with salt and ground black pepper. Set aside. In a covered large saucepan cook sweet potatoes in enough boiling water to cover for 12 to 15 minutes or until very tender. Drain and cool slightly. In a food processor combine sweet potatoes, egg, brown sugar, and butter. Cover and process until smooth. In small bowl stir together flour, bread crumbs, baking powder, and salt. Add flour mixture to sweet potato mixture. Cover and process just until combined. In a deep-fat fryer or large heavy saucepan heat 1" oil to 350ºF/175ºC. For each fritter, drop 1 tablespoon of batter into hot oil. Fry, a few at a time, about 2 minutes or until fritters are golden, turning once. Remove with a slotted spoon and drain on paper towels. Serve warm with Yogurt-Chive Dipping Sauce.
