Subj : BH&G 1879 To : ALL From : DAVE DRUM Date : Sat Feb 20 2021 14:22:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Manicotti Bolognese Categories: Pasta, Pork, Beef, Vegetables, Wine Yield: 6 Servings 32 oz Refrigerated manicotti - pasta 1 ts Olive oil 6 sl Pancetta or bacon; chopped 2 tb Minced onion 3 cl Garlic; chopped 1 lb Lean ground beef 1/4 c Dry red wine 1 c Marinara sauce 1/4 c Fresh parsley; chopped 1/4 c Grated Parmesan Set oven @ 350ºF/175ºC. Coat a 9" X 13" baking dish with cooking spray. Place cooked pasta (follow cooking directions on the package or use fresh manicotti if available) in prepared baking dish; set aside. Heat oil in a large nonstick skillet over medium-high heat. Add pancetta, and cook until slightly browned, about 2 minutes. Add onion; cook until softened, about 2 minutes. Add garlic; cook until aromatic, about 30 seconds. Add beef; cook until no longer pink, breaking up meat with the back of a wooden spoon, about 5 minutes. Drain off excess fat. Add wine; bring to a simmer. Stir in marinara sauce and 1/4 cup parsley (reserve 1 tablespoon for garnish if desired); cook until sauce has thickened, about 6 minutes. Spoon sauce over pasta, and cover with foil. Bake until manicotti are heated through, about 30 minutes. Top with Parmesan and remaining parsley; serve immediately.
