Subj : BH&G 1877 To : ALL From : DAVE DRUM Date : Sat Feb 20 2021 14:21:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Ribeyes w/Chipotle Butter Categories: Beef, Citrus, Chilies, Herbs Yield: 4 Servings 1/4 c Butter, softened 1 tb Fine chopped shallots 2 ts Snipped fresh basil or - cilantro 1 1/2 ts Lime juice 1 ts Fine chopped chipotle in - adobo 2 ts Ground cumin 1 ts Paprika 1/2 ts Salt 1/2 ts Ground white pepper 1 tb Olive oil 1/4 ts Adobo sauce 4 (10 oz ea) ribeye steaks; 1" - thick Fresh basil or cilantro - sprigs Lime wedges For chipotle butter, in a small bowl stir together butter, shallots, snipped basil or cilantro, lime juice, and chipotle pepper until combined; set aside. In another small bowl stir together cumin, paprika, salt, and pepper. Stir in oil and adobo sauce until a paste forms. Spread mixture over both sides of steaks. Grill steaks on the rack of an uncovered grill directly over medium coals until desired doneness, turning once halfway through grilling. Allow 14 to 18 minutes for medium doneness. Serve steaks with chipotle butter and garnish with herb sprigs and lime wedges. Makes 4 servings.
