Subj : BH&G 1857 To : ALL From : DAVE DRUM Date : Thu Feb 18 2021 14:33:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Grilled Chicken Francese-Style Categories: Poultry, Vegetables, Wine, Citrus Yield: 4 Servings 1 1/2 lb Thin sliced chicken cutlets 1 1/2 ts Lemon pepper 1/2 18 ounce pkg prepared - polenta; in 1/2" slices 1 tb Olive oil 3 tb Chopped shallot 1/2 c White wine 1 tb All-purpose flour 1 c Chicken broth 2 tb Lemon juice 2 tb Capers 2 tb Chopped parsley 1/4 ts Salt 1/2 ts Black pepper 2 tb Unsalted butter Roasted carrots; (opt) Heat a lightly greased grill pan over medium-high heat. Season the chicken with the lemon pepper. Grill 3 minutes per side. Remove and keep warm. Grill polenta slices 1 to 2 minutes per side until grill marks form. Set aside. In a medium-size saucepan, heat oil over medium-high heat. Add shallot and cook 3 minutes, stirring occasionally. Add wine and simmer 1 minute. Stir together flour and broth and add to saucepan; simmer 2 minutes, until thickened. Stir in lemon juice, capers, parsley, salt and pepper. Whisk in butter. Serve chicken with the sauce and the grilled polenta. Accompany with roasted carrots, if desired.
