Subj : St. Claude 09 To : All From : Dave Drum Date : Sun Feb 14 2021 11:50:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Reine-Claude Plum Tart Categories: Desserts, Pastry, Fruits, Breads Yield: 8 Servings MMMMM---------------------------PASTRY-------------------------------- 250 g Flour 100 g Softened butter 1/2 Glass water 1 Egg yolk 1 ts Sugar 1 pn Salt MMMMM--------------------------FILLING------------------------------- 750 g Reine Claude or other plums 100 g Sugar 20 cl Water 1 tb Cornmeal or bread crumbs Make a well with flour and place in it all the other ingredients. Stir quickly with fingertips without really kneading. If the dough sticks, add a little flour and form a ball. You can put the dough to cool while you cut plums. Cut the plums in half and pit them. Place the sugar and water in a saucepan and boil until you get a light syrup. Then dip the plums and let them poach for 2-3 minutes. Remove the plums and keep the syrup. Roll out the pastry and line it in a buttered and floured pie mold. Prick the bottom with a fork and sprinkle with semolina which will absorb the plums cooking juices. Then cover with plums and put in the oven thermostat 7 (210ºC/410ºF) about 40 minutes. Meanwhile, put the syrup over high heat until it thickens. Then pour it over the baked pie.
