Subj : BH&G 1806 To : ALL From : DAVE DRUM Date : Sat Feb 13 2021 12:49:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Spicy Herb Fried Green Tomatoes Categories: Vegetables., Dairy, Chilies, Potatoes Yield: 6 Servings 8 oz Carton dairy sour cream 6 cl Garlic; minced 1 tb Snipped fresh cilantro 1/8 ts Salt 1/4 c Milk 2 c Crushed potato chips; abt 5 - ounces 1 tb Snipped fresh thyme 1/2 ts (ea) black & cayenne pepper 1/2 c All-purpose flour 2 lg Firm green tomatoes; 1 lb - total, in 1/4" slices 3 tb Butter 3 tb Olive oil In a small bowl combine sour cream, garlic, cilantro, and salt. Reserve half of the mixture for dipping. Place the remaining mixture in a shallow dish and whisk in milk until combined. In another shallow dish combine crushed potato chips, thyme, black pepper, and cayenne pepper. Place flour in a third shallow dish. Dip tomato slices in flour, turning to coat; shake off excess. Dip in sour cream-milk mixture, then in potato chip mixture. In an extra-large skillet heat 2 tablespoons of the butter and 2 tablespoons of the oil over medium heat. Add half of the coated tomato slices; cook about 4 minutes or until crisp and golden, turning once halfway through cooking. Drain on paper towels. Add remaining butter and olive oil to skillet. Add remaining tomato slices; cook as above. Serve with reserved sour cream mixture.
