Cook until the parsnips are tender. Add the sugar and bring to the boil, stirring (make sure the sugar is completely dissolved before it comes back to the boil). Boil for approximately 45 minutes or until setting point is reached. Remove from heat and allow to stand 5 minutes. Pour into warm sterilised jars and seal immediately.
