Subj : BH&G 1788 To : ALL From : DAVE DRUM Date : Thu Feb 11 2021 13:43:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Mega Beef Tacos w/Soft & Crunchy Shells Categories: Beef, Vegetables, Chilies, Dairy, Herbs Yield: 6 Servings 1 lb Ground beef 1 tb Chilli spice mix 1 tb Ground cumin 10 oz Can enchilada sauce 16 oz Can refried beans 12 (6") flour tortillas; - warmed 12 Taco shells 1 1/2 c Shredded Mexican-style four - cheese blend +=OR=+ 1 1/2 c Shredded Cheddar cheese 1 1/2 c Shredded lettuce 1 lg Tomato; chopped 1/2 c Chopped red onion 1/2 c Dairy sour cream 1/2 c Bottled salsa 1/3 c Snipped fresh cilantro 2 Jalapenos; thin sliced Set oven @ 325ºF/163ºC. In a large skillet cook meat until brown; drain well. Stir in the chili powder, cumin, and enchilada sauce; cook until heated through, stirring occasionally. Keep warm. Meanwhile, wrap flour tortillas in foil. Heat in oven about 10 minutes or until warm. Arrange taco shells in a 15" X 10" X 1" baking pan; add to oven for the last 6 minutes to crisp. Place refried beans in a small saucepan; heat just until warm, stirring occasionally. To assemble, spread a thin layer of refried beans onto a flour tortilla. Fold the tortilla around a taco shell. Fill the crunchy shell with beef mixture and top with cheese, lettuce, tomato, red onion, sour cream, salsa, cilantro, and/or jalapeno chile pepper slices.
