Subj : BH&G 1746 To : ALL From : DAVE DRUM Date : Sun Feb 07 2021 12:09:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Cavatappi w/Spring Vegetables Categories: Pasta, Vegetables, Poultry, Cheese Yield: 8 Servings 1 lb Cavatappi or other - corkscrew-shape pasta 1 lb Fresh asparagus; in 1" - pieces 1 1/2 lb Diced chicken 1 lg Yellow bell pepper; diced 1 c Cherry tomatoes; halved 5 1/4 oz Container semisoft cheese - w/herbs Salt & black pepper Cook pasta according to package directions, adding asparagus during last 2 minutes of cooking. Drain, reserving 1/2 cup pasta water. Cover and keep warm. Meanwhile, prepare chicken in a skillet. Add sweet pepper to skillet during last 2 minutes of cooking. In a large bowl gently combine hot pasta, asparagus, chicken, sweet pepper, tomatoes, cheese, and reserved pasta water until cheese is melted. If desired, season to taste with salt and black pepper. Serving Suggestion: Sprinkle with shredded Romano or Parmesan cheese and garnish with fresh oregano.
