      Title: Citrus-Kissed Chicken Salad
 Categories: Poultry, Salads, Citrus, Herbs
      Yield: 6 Servings
 
      2 tb Olive oil
      2 tb Fresh lime, lemon, or orange
           - juice
      1 ts Snipped fresh basil
      2 tb Water
    1/2 ts Dijon-style mustard
           Salt & black pepper
      9 c  Torn mixed salad greens
      2 c  Pre-cooked chicken strips
  1 1/2 c  Grapefruit sections
  1 1/2 c  Orange sections
      1 c  Thin sliced red onion
 
  For the dressing, in a screw-top jar combine oil, lime
  juice, basil (if desired), water, mustard, salt, and
  pepper. Cover and shake well; set aside.
  
  Arrange greens on six plates. Arrange chicken strips,
  grapefruit sections, orange sections, and red onion slices
  on top of greens. Drizzle dressing over salads.
  
  Serving Suggestion: Serve with warm multigrain dinner
  rolls.
