Subj : BH&G 1741 To : ALL From : DAVE DRUM Date : Sun Feb 07 2021 12:04:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Shrimp & Tomato Piccata Categories: Seafood, Vegetables, Citrus, Pasta Yield: 4 Servings 1 1/3 lb Medium shrimp in shells 3 tb Olive oil 8 oz Fresh French string beans or - other small, thin green - beans; trimmed 3 md Tomatoes; in wedges 1 ts Fine shredded lemon peel 3 tb Lemon juice 1 tb Capers; drained (opt) 2 c Hot cooked pasta (opt) Thaw shrimp, if frozen. Peel and devein shrimp, leaving tails intact if desired. Rinse shrimp; pat dry with paper towels. Set aside. In a 12" skillet heat 1 tablespoon of the olive oil over medium-high heat. Add green beans to skillet; cook and stir for 3 minutes. Add shrimp; cook and stir about 3 minutes or until shrimp are opaque. Add tomatoes; cook for 1 minute more. For sauce, in a small bowl whisk together the remaining 2 tablespoons olive oil, the lemon peel, lemon juice, and capers (if using). If desired, serve shrimp mixture over hot cooked pasta.
