Subj : St. Colette 09 To : All From : Dave Drum Date : Sat Feb 06 2021 12:57:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Colette's Delicious Beef Stew Categories: Beef, Vegetables, Wine, Herbs Yield: 4 Servings 3 Bay leaves 230 ml Beef stock Salt & black pepper 2 lg Carrots; peeled; in thick - slices 2 tb Plain flour; for dusting 500 ml Red wine 2 lb Beef 4 Sprigs fresh thyme 4 cl Garlic; crushed 1 tb Olive oil 5 oz Shallots; peeled, trimmed 3 ts Tomato puree Set oven @ 150AøC/300AøF. Season beef with salt & pepper and dust with flour. Place a large hob proof casserole dish over a medium heat and add a dash of oil. When hot, brown the beef (in batches if necessary) until colored on both sides. Add diced carrots, onions, garlic & herbs, stirring over a medium heat for 2-3 minutes. Pour in the red wine to deglaze the pan, boil for 2-3 minutes, then stir in the tomato puree. Add the stock and bring to simmering point. Mix well, then cover with a lid but allow some steam to escape. Place in the oven for 2 1/2 hours or until beef is tender.
