Subj : St. Agatha 07 To : All From : Dave Drum Date : Thu Feb 04 2021 09:57:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Agatha's Peanut Butter Fudge Categories: Candy, Nuts Yield: 28 Servings 50 g Butter 200 g Demerara or soft brown - sugar 50 g Milk 100 g Peanut butter 3 g Vanilla extract 120 g Icing sugar; sifted Line a 1 kg loaf tin with baking paper. Put the butter, sugar and milk in a large saucepan over a gentle heat. Stir very gently until the all the sugar has dissolved. Once the sugar has dissolved, bring to the boil and, without stirring, cook for 3 minutes. Remove from the heat and stir in the peanut butter and vanilla extract. When well mixed, add the sifted icing sugar, stir in and then beat with a wooden spoon until the fudge is nice and smooth. Spoon the fudge into the prepared tin, level the surface and leave to cool, uncovered. Lift out the fudge in its paper and cut into neat, even squares.
