Subj : St. Oliver 10 To : All From : Dave Drum Date : Tue Feb 02 2021 15:39:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Jamie Oliver's Griddled Pork Categories: Pork, Potatoes, Vegetables, Herbs, Chilies Yield: 4 Servings 4 (175 g ea) pork loin steaks Jersey Royal new potatoes; - as many as your family - will eat lg Sprigs of rosemary, mint, - and thyme. 1 sm Lemon 285 g Trimmed green beans 200 g Broad beans (podded weight) 285 g Bag baby leaf spinach 1/2 sm Red chile; chopped 1 cl Garlic; chopped 100 g Butter Put the potatoes into a large pan with the herb sprigs and halved lemon. Cover with water and bring to the boil. Boil until just cooked, then drain and set aside. Season the pork on both sides with salt, pepper and a little olive oil, then griddle until just cooked through ~ about 8-10 minutes in total, depending on the thickness of the steaks. Boil the broad beans for 2 minutes, then remove and discard the tough skins. Steam the green beans lightly for 2-3 minutes. Saute the spinach in a splash of olive oil with the chopped chilli and garlic until wilted. Just before you're ready to serve, heat the butter in a large frying pan until foaming. Add the potatoes and beans and toss to coat. Put a layer of spinach in the bottom of your plate, spoon over the potatoes and bean mixture, and top with the pork.
