I by no means starve, go to the local library or a book store and pick up some Vegan cookbooks, My wife has several.

Places like Trader Joes or especially Wholefoods will have you quite happy.  Also check out Fidonet as well do a keyword search for Vegan, what you find
within the Fidonet community concerning Vegan recipes may surprise you.
