To change from English to German:
Config -> Options -> Language

To change from German to English:
Config -> Optionen -> Sprache

Quote multiple messages in a single reply.

Nope, just mark a bunch of messages with the <Spacebar> and then press
<Shift+B>. However, I do not like the way OpenXP handles this, it's
somewhat messy to say the least. Try it and you'll see what I mean but 
don't forget to unmark all the marked messages after you're done.

Cursor over any message in any message list and press <Ctrl+H>.

Not only that, it paid dividends when my UK Boss Node's system was down
for 3 weeks recently - it guaranteed continuity of mail :)
