Mozilla Thunderbird automatically changes the letter's charset to UTF-8 if even one character in the text you had copypasted doesn't belong to the ASCII charset that set in Options. When you copy texts from the Internet (UTF-8 as a rule) you should filter it to ASCII. Another issue are some plugins - they can support only ASCII and distort symbols from other languages.
