      Title: Mushroom & Onion Grilled Cheese Sandwiches
 Categories: Mushrooms, Pork, Cheese, Vegetables, Breads
      Yield: 4 servings
 
      3 tb Butter; softened, divided
      8 oz Sliced baby portobello
           - mushrooms
      1 sm Onion; halved, thin sliced
      8    Thin slices Cheddar cheese
      8 sl Texas toast
      4 sl Bacon; cooked, crumbled
 
  In a large nonstick skillet, heat 1 tablespoon butter
  over medium-high heat. Add mushrooms and onion; cook and
  stir 4-5 minutes or until tender. Remove from pan. Wipe
  skillet clean.
  
  Place 1 slice cheese on each of 4 bread slices. Top with
  mushroom mixture, bacon and the remaining cheese and
  bread. Lightly spread outsides of sandwiches with
  remaining butter.
  
  In same skillet, toast sandwiches in batches over medium
  heat 45-60 seconds on each side or until golden brown
  and cheese is melted.
