      Title: Zucchini Onion Pie
 Categories: Squash, Vegetables, Cheese, Herbs, Pastry
      Yield: 6 servings
 
      3 lg Eggs
      1 c  Grated Parmesan cheese
    1/2 c  Oil
      1 tb Minced fresh parsley
      1 cl Garlic; minced
    1/4 ts Salt
    1/8 ts Pepper
      3 c  Sliced zucchini
      1 c  Biscuit/baking mix
      1 sm Onion; chopped
 
  In a large bowl, whisk the first 7 ingredients. Stir in
  the zucchini, baking mix and onion. Pour into a greased
  9" deep-dish pie plate. Bake @ 350-|F/175-|C for 25-35
  minutes or until lightly browned.
