      Title: Tableside Guacamole
 Categories: Fruits, Herbs, Chilies, Spreads
      Yield: 4 servings
 
    1/4 c  Fine chopped cilantro,
           - divided
      2 tb Fine chopped white onion
    1/2 ts Kosher salt
    1/2    Fresh serrano chile; stemmed
           - fine chopped
      2 tb Fresh lime juice
      2 sm Ripe avocados; pitted,
           - coarse chopped
           Tortilla chips; to serve
 
  Using a mortar and pestle, pound half the cilantro, the
  onion, salt, and serrano chile into a coarse paste. Add
  the lime juice, avocado, and remaining cilantro and
  pound to the desired consistency. Serve with tortilla
  chips.
