Subj : Penny Pinchers - 15 To : All From : Dave Drum Date : Wed Jun 29 2022 15:12:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Chicken Taco Salad Bowl Categories: Breads, Poultry, Vegetables, Beans, Herbs Yield: 2 servings 2 (10") flour tortillas Cooking Spray MMMMM----------------------SEASONING BLEND--------------------------- 1 ts Chilli spice mix 1/2 ts Ground cumin 1/2 ts Onion powder 1/2 ts Salt 1/4 ts Black pepper MMMMM---------------------------SALAD-------------------------------- 6 oz Boned, skinned chicken 2 c Chopped romaine lettuce 1/2 c Black beans; rinsed, - drained 1/2 c Corn; thawed 1/4 c Chopped tomato 1/2 c Shredded cheddar cheese 1 tb Chopped red onion 1 Avocado; pitted, in chunks Set air fryer @ 360ºF/182ºC. Lightly spray both sides of tortillas with cooking spray. Place one tortilla in air fryer basket so that it forms a bowl. (How high it comes up the sides will vary based on the size of your air fryer. The one in the photo was made in a 3.4-quart air fryer.) Place a foil ring inside the tortilla, to help it hold its shape. Air-fry 4 minutes, remove foil ring, turn tortilla bowl over, and continue to cook 2 minutes or until crispy. Repeat with second tortilla. Meanwhile, in a small bowl, combine Seasoning Blend ingredients; mix well. Sprinkle both sides of chicken with seasoning blend. Coat basket with cooking spray, place chicken in basket, and air-fry 12 to 13 minutes or until no longer pink in center. Let cool, then cut into slices or chunks (that’s up to you).
