      Title: Honey Dijon Pork Roast
 Categories: Five, Pork
      Yield: 5 servings
 
    1/4 c  Honey
      2 tb + 1 ts Dijon mustard
    1/2 ts Salt
  2 1/4 lb Boneless center-cut single
           - pork loin
 
  Set oven @ 375ºF/190ºC.
  
  Coat a medium roasting pan with cooking spray.
  
  In a medium bowl, combine honey, mustard, and salt.
  Place pork in roasting pan and coat completely with
  mixture.
  
  Cover pork with aluminum foil and roast 40 minutes.
  Uncover and baste with pan drippings.
  
  Roast pork an additional 15 to 20 minutes, or until no
  pink remains. Slice and serve with pan drippings.
