Subj : Porky Pig - 04 To : All From : Dave Drum Date : Thu Jun 02 2022 15:26:12 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Roasted Pork Chops & Vegetables Categories: Pork, Herbs, Mushrooms, Vegetables Yield: 4 servings 2 tb Chopped fresh parsley 1 ts Dried thyme leaves 1/2 ts Garlic powder 1/2 ts Salt 1/4 ts Black pepper 4 Pork rib chops; 1/2" thick Cooking spray 4 oz Mushrooms; halved 1 lg Bell pepper; in 1" pieces 1 lg Onion; in wedges 1 c Cherry tomatoes; halved 1 tb Olive oil Set oven @ 425ºF/218ºC. Coat a baking sheet with cooking spray. In a small bowl, combine parsley, thyme, garlic, salt, and pepper. Spray both sides of pork chops with cooking spray. Sprinkle with 1-1/2 teaspoons herb mixture; set aside remaining mixture. Place pork chops on prepared baking sheet. In a large bowl, combine mushrooms, bell pepper, onion, and tomatoes. Add oil and remaining herbs to vegetables, and stir until evenly coated. Spread evenly on baking sheet between pork chops. Bake 30 to 35 minutes, or until pork is no longer pink. Serve immediately.
