      Title: Old World Peasant Soup
 Categories: Vegetables, Pork, Beans, Herbs, Greens
      Yield: 5 servings
 
      2 tb Olive oil
      1    Onion; fine chopped
      1    Carrot; peeled, halved, thin
           - sliced
      1    Rib celery; chopped
      4 c  Chicken broth
     32 oz (2 cans) cannellini beans,
           - undrained
      1 lb Kielbasa; thin sliced
    3/4 ts Garlic powder
    1/2 ts Italian seasoning
    1/4 ts Black pepper
      2 c  Fresh spinach
 
  in a soup pot, heat oil over medium-high heat. Saute
  onion, carrot, and celery 6 to 8 minutes, or until
  tender.
  
  Add remaining ingredients except spinach and bring to a
  boil. Reduce heat to low, and simmer 20 minutes. Stir in
  spinach and serve.
