Subj : BH&G 3645 To : All From : Dave Drum Date : Tue Aug 17 2021 04:35:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Vegetable Egg Salad Wraps Categories: Squash, Herbs, Eggs, Vegetables, Breads Yield: 6 Servings 6 lg Hard-cooked eggs; chopped 1/2 c Chopped cucumber 1/2 c Chopped yellow summer squash - and/or zucchini 1/4 c Shredded carrot 2 tb Chopped red onion 1/4 c Mayonnaise 2 tb Dijon-style mustard 1 tb Milk 1 ts Snipped fresh tarragon or - basil +=OR=+ 1/4 ts Dried tarragon or basil, - crushed 1/4 ts Salt 1/8 ts Paprika 6 Green leaf lettuce leaves 6 (6") whole wheat flour - tortillas 2 Roma tomatoes; thin sliced In a large bowl combine eggs, cucumber, yellow summer squash, carrot, and red onion. For dressing, in a small bowl stir together mayonnaise, Dijon-style mustard, milk, tarragon, salt, and paprika. Pour dressing over egg mixture; toss gently to coat. For each sandwich, place a lettuce leaf on a tortilla. Arrange 3 or 4 tomato slices on top of the lettuce, placing slices slightly off-center. Spoon about 1/2 cup of the egg mixture on top of the tomato slices. Roll up tortilla; secure with wooden pick, if necessary. Cut tortilla rolls in half crosswise.
