Subj : BH&G 3637 To : All From : Dave Drum Date : Mon Aug 16 2021 05:42:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Classic Zabaglione Categories: Puddings, Wine, Herbs Yield: 3 Servings 6 Egg yolks 1/2 c Sugar 2/3 c Sweet Marsala wine 1/8 ts Salt 1/8 ts Freshly ground nutmeg or - ground cinnamon (optional) 1 ts Vanilla In a large bowl combine egg yolks and sugar. Beat with an electric mixer on medium to high speed until the mixture is thick and lemon-color and the sugar is dissolved. Beat in Marsala, salt, and, if desired, nutmeg. Transfer mixture to the top of a double boiler. Place over gently boiling water (upper pan should not touch water). Cook, beating constantly with the electric mixer on medium speed, about 13 minutes or until mixture is thick and triple in volume, and an instant read thermometer inserted in center of mixture registers 145ºF/63ºC and holds that temperature for 3 1/2 minutes (or, alternatively, until thermometer registers 165ºF/74ºC). Stir in vanilla. Serve immediately or chill completely before serving. SERVING SUGGESTIONS: Serve with fresh fruit. Use as a filling or topping for cake or pastries. Serve with sorbet.
