Subj : BH&G 3602 To : All From : Dave Drum Date : Fri Aug 13 2021 00:37:22 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Citrus-Marinated Fish Tacos Categories: Seafood, Breads, Citrus, Chilies, Dairy Yield: 4 Servings 1 lb Firm skinless white fish - fillets, such as cod, - halibut, or sea bass 1/2 c Orange juice 1 tb Honey 1 Jalapeno; chopped 1 Clove garlic, minced 6 oz Plain Greek yogurt 1/2 English (seedless) cucumber; - chopped 1 tb Lemon juice 1/2 ts Salt 8 (6") soft corn or flour - tortillas; warmed MMMMM-------------------------GARNISHES------------------------------ Shredded lettuce Jalapeno slices Orange zest (opt) Cut fish into 8 equal portions. In a shallow dish whisk together the orange juice, honey, chopped jalapeno, and garlic. Add fish, turning to coat. Cover and let stand 15 minutes, turning once. Meanwhile, stir together the yogurt, cucumber, lemon juice, and 1/4 teaspoon salt; set aside. Drain fish, discarding marinade. Sprinkle remaining salt over fish. Grill in a preheated grill pan (optional: line with foil) or on a gas or charcoal grill on the greased rack of a covered grill directly over medium heat for 4 to 6 minutes per 1/2" thickness or until fish flakes easily when tested with a fork, turning once. Top each tortilla with fish. Serve with shredded lettuce, jalapeno slices, and/or orange zest, if desired, and top with yogurt mixture.
