Subj : BH&G 3595 To : All From : Dave Drum Date : Thu Aug 12 2021 06:54:54 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Mozzarella-Stuffed Burgers Categories: Beef, Cheese, Breads, Herbs, Vegetables Yield: 6 Servings 3/4 c Fresh grated Parmesan - cheese 1/2 c Snipped fresh basil (opt) 1/3 c Snipped oil-packed dried - tomatoes; drained 3 cl Garlic; minced 1/2 ts Fresh ground black pepper 1/4 ts Salt 1 1/2 lb 85% lean ground beef 8 oz Bulk Italian sausage 6 oz Fresh mozzarella cheese 6 Hamburger buns or ciabatta - rolls; split MMMMM-------------------BASIL-OLIVE MAYONNAISE------------------------ 1/3 c Mayonnaise 1 tb Kalamata olive tapenade 1 tb Snipped fresh basil In a small bowl combine mayonnaise, Kalamata olive tapenade, and snipped fresh basil. In a large bowl combine Parmesan cheese, basil (if desired), tomatoes, garlic, pepper, and salt. Add ground beef and Italian sausage; mix well. Shape meat mixture into twelve 1/2" thick patties. Cut mozzarella cheese into six 1/4" thick slices. Place mozzarella cheese on the centers of six of the patties. Top with the remaining six patties; pinch edges together to seal. For a charcoal grill, arrange medium-hot coals around a drip pan. Test for medium heat above pan. Place patties on grill rack over drip pan. Cover and grill for 20 to 25 minutes or until done, turning patties once halfway through grilling. (For a gas grill, preheat grill. Reduce heat to medium. Adjust for indirect cooking and grill as above.) Serve burgers in buns with Basil-Olive Mayonnaise. MAKE-AHEAD DIRECTIONS: Prepare burgers as directed in Steps 1 and 2: In a storage container layer patties between sheets of waxed paper; cover and chill overnight.
