Subj : BH&G 3574 To : All From : Dave Drum Date : Tue Aug 10 2021 04:43:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Prosciutto & Green Bean Potato Salad Categories: Potatoes, Beans, Herbs, Citrus, Pork Yield: 4 Servings 2 lb Red-skinned potatoes; in 1" - pieces 8 oz Fresh green beans; trimmed, - in 1 1/2" pieces 1/4 c Olive oil 1/4 c White wine vinegar 2 tb Water 1 tb Lemon juice 1/2 ts Salt 1/4 ts Crushed red pepper 2 oz Thin sliced prosciutto, - country-style ham or Black - Forest ham; in bite-size - strips 2 tb Snipped fresh basil 1 tb Snipped fresh Italian - (flat-leaf) parsley In a covered large saucepan cook potatoes in enough boiling water to cover for 5 minutes. Add green beans. Cook, covered, about 5 minutes more or until potatoes are tender; drain. Transfer potato mixture to a large bowl; cool. For dressing, in a small bowl whisk together oil, vinegar, the water, lemon juice, salt, and crushed red pepper. Pour dressing over potato mixture. Add prosciutto, basil, and parsley; toss gently to coat. Serve at room temperature.
