      Title: Claudia's Pancakes
 Categories: Breads, Dairy, Fruits
      Yield: 6 Servings
 
      2 c  Plain flour
    1/2 c  Caster sugar
           Ground cinnamon
      2 lg Eggs
      1 c  Milk; plus extra
           Banana; to serve
           Strawberries; to serve
 
  Combine the flour, sugar and cinnamon in a large bowl.
  
  Add the eggs and milk and whisk to make a smooth batter,
  add extra milk if needed.
  
  Heat an oiled frying pan over a medium heat, spoon a
  ladle of batter into the pan, cook for 3-4 minutes or
  until bubbles appear, carefully turn and cook a further
  2-3 minutes or until cooked through. Repeat with
  remaining batter.
  
  To serve, stack the pancakes and top with sliced banana
  and strawberries.
