Ingredients: 1 Rotisserie Chicken buy the traditional seasoned kind 1/2 Cup Chopped Vidalia Onions (more if you like) 1/2 Cup Chopped Celery (more if you like) 1 Can Sliced Water Chestnuts further chopped up a bit 1 Packet of slivered almonds (I buy the 1 cup packet and use about 3/4) 2/3 Cup Craisins (I use the sugar free ones but the others are ok) 4 TBSP Tarragon 1 1/2 Cups DUKES (must be Dukes) Mayonnaise (did I say DUKES) When buying the rotisserie chicken do not buy any varieties like lemon pepper or bbq or anything odd and unusual... buy only a "traditional" chicken" De-bone all of the white meat and the meat of 1 thigh/leg quarter. Make sure all bones are removed as you shred the chicken. I find it effective to use my electric mixer to finely shred the chicken. Stir in the mayonnaise it may seem like a lot but that's how we like it. Add the rest of the ingredients in and mix until well incorporated. This is so simple and delicious people will think you spent hours making it. The roasted taste of the rotisserie chicken is amazing in this recipe.
