      Title: Cashew Turkey Salad Sandwiches
 Categories: Poultry, Nuts, Bread, Dairy, Fruits
      Yield: 4 servings
 
    1/4 c  Mayonnaise
      2 tb Plain yogurt
      1    Green onion; chopped
    1/4 ts (ea) salt & pepper
  1 1/2 c  Diced, cooked turkey
    1/4 c  Thin sliced celery
      2 tb Chopped dried apricots
      2 tb Chopped unsalted cashews
      8 sl Pumpernickel bread
      4    Lettuce leaves
 
  In a bowl, mix the first 5 ingredients. Stir in turkey,
  celery, apricots and cashews.
  
  Line half of the bread slices with lettuce. Top with
  turkey mixture and remaining bread.
