Subj : Canadian Split Pea Soup To : All From : Ben Collver Date : Fri Oct 25 2024 11:28:58 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Canadian Split Pea Soup Categories: Canadian, Soups Yield: 6 Servings 8 c Water 2 c Dry yellow split peas 1 tb Sunflower oil 4 cl Garlic; minced 3/4 c Onion (2); chopped 3/4 c Carrot (1); sliced 3/4 c Celery; sliced 1 ts Thyme 1 c Potato (1); unpeeled, -chopped 1 c Turnip or rutabaga; peeled, -chopped 1 ts Salt 1 ts Cider vinegar 1/8 ts Black pepper 1/4 c Fresh parsley; chopped Bring water to a boil in a 4 qt soup pot. Add split peas, lower heat to a simmer, and cover loosely. Cook, stirring occasionally, for 1 hour, until split peas are tender. Meanwhile, set a 10" cast-iron fry pan over medium heat. Add oil and when hot add the garlic, onions, carrots, celery, and thyme. Sauté until tender. Add sautéed vegetables, potato, and turnip to the cooked peas; continue to simmer. Add the salt, vinegar, pepper, and parsley. Cook the soup 30 minutes more, covered, stirring occasionally, until the vegetables are tender and the peas have dissolved.
