Subj : Kuba (Mushroom Barley Risotto) To : All From : Ben Collver Date : Sat Feb 03 2024 10:54:53 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Kuba (Mushroom Barley Risotto) Categories: Czech, Rice Yield: 1 Batch 250 g Pearl barley 30 g Dried mushrooms 100 g Onion 50 g Garlic 70 g Lard Salt Pepper Caraway seeds Marjoram Soak the dried mushrooms in a little bit of cold water. Soak the pearl barley in a separate bowl. Wash the pearl barley and set it to boil in cold salted water. Cook the soaked mushrooms in the same manner. Saute the finely chopped onions in half of the hot lard. Add a little bit of the crushed caraway seeds. When the onions start to brown, add garlic and immediately add the dried mushroom broth, then add the cut and boiled mushrooms and stew everything for a short time. Then stir this mix into the cooked and strained pearl barley. Season everything with powdered marjoram and ground pepper. Use the other half of the lard to grease a baking dish or pan and place the prepared mix inside it. Bake at a medium heat for about thirty minutes. Serve with sauerkraut salad, pickle and mushrooms.
